Veggie-Packed “Fried Rice”

Incorporating veggies into your diet should not be burdensome. To eat less calories in my rice, I cook it with a lot more veggies than rice, a lot more than what the regular Nigerian fried rice would have.

Ingredients:

For this recipe, I used:

  • 3-4 tablespoons of olive oil – 477 calories (that’s why I have the quotations around the “fried” in my subject, because this rice wasn’t fried).
  • 6 cups of pre-boiled rice – 1223 calories
  • 10 cups of mixed vegetables and onions – 1200 calories
  • 0.5 cup of chicken liver – 130 calories

To get the calorie content for 1 cup, I divided by 16 (which is addition of veggies and rice).

Instructions:
  1. Pre-boil your rice
  2. Heat your pot and put your oil. Add onions, mix and let fry a bit.
  3. Add chicken liver. Let it sit for 2-3 minutes.
  4. Add mixed veggies, mix and let sit until all the water is dry.
  5. Add seasoning and mix.
  6. Add in rice and mix. Put a little water and mix again. Cover the pot and let sit for about 3-5 minutes until excess water dries up.
  7. Serve & Enjoy.

Total Calories per cup: 188 calories.

Less healthy alternative:

  • Oil-packed, veggie-sparse regular Nigerian fried rice.300 calories per cup
