Ingredients:
  • Gizzard
  • Plantain
  • Onion, pepper, tomato sauce
  • Salt, pepper to taste

Instructions:
  1. Air-fry diced and seasoned gizzard in air-fryer for 10-15 minutes
  2. Air-fry diced plantains in air-fryer for 10-15 minutes
  3. Blend onion, tomatoes and peppers together and pour in pam; place on medium heat; cook for 7-10 minutes or until water reduces significantly.
  4. Add salt and pepper (and bouillon -optional).
  5. Add gizzard and plantain and mix.
  6. Cover and let sit for a few more minutes.
  7. Serve & Enjoy.

TOTAL calories: 195 Calories per cup

  • Assuming a cup will contain about 0.3 cup gizzard, 0.6 cup plantains, 2 tablespoons of tomato/pepper/onion mix.

Less healthy alternative: 381 calories

  • Fried gizzards, fried plantains, fried stew.
