Ingredients:
- Gizzard
- Plantain
- Onion, pepper, tomato sauce
- Salt, pepper to taste
Instructions:
- Air-fry diced and seasoned gizzard in air-fryer for 10-15 minutes
- Air-fry diced plantains in air-fryer for 10-15 minutes
- Blend onion, tomatoes and peppers together and pour in pam; place on medium heat; cook for 7-10 minutes or until water reduces significantly.
- Add salt and pepper (and bouillon -optional).
- Add gizzard and plantain and mix.
- Cover and let sit for a few more minutes.
- Serve & Enjoy.

- Assuming a cup will contain about 0.3 cup gizzard, 0.6 cup plantains, 2 tablespoons of tomato/pepper/onion mix.
