INGREDIENTS
Dry Ingredients
- 100% whole wheat flour | 2 cups
- Baking soda | 1 tsp
- Baking powder | 1 tsp
- Nutmeg | 0.5 tsp
- Cinnamon | 1 tsp
- Salt | 0.5 tsp
- Sugar | 4 tsp (add more to your taste)
Wet Ingredients
- Eggs | 2
- 2% milk | 1.25 – 1.5 cup
- Vanilla extract | 0.5-1 tsp
Star Ingredient 😊
- Overripe bananas | 3 medium sizes
Optional Ingredient
- Raisins or mountain trail | 0.25 cup
DIRECTIONS
- Preheat oven to 375 F.
- Mix dry ingredients in a bowl.
- Whisk wet ingredients in a bowl.
- Mash bananas separately with a fork in a different bowl.
- Add wet ingredients into dry ingredients and mix.
- Add banana in and mix.
- Spray 12 muffin pan with 0 calorie cooking spray.
- Pour batter carefully into muffin holes and add bits of raisins or mountain trail into each one.
- Put in pre-heated oven and let bake for 15-17 minutes or until a knife can go in and out of baked muffin smoothly.
